Vegan Macaroni Recipe

Another favourite of mine. A macaroni and veg pasta. Very tasty!

INGREDIENTS

  • 300g Spelt Macaroni pasta from Simple Truth.
  • 1/2 Head of broccoli (chopped)
  • 1/2 head of cauliflower (chopped) 
  • 1 Red onion (chopped)
  • 1 Yellow pepper (sliced)
  • 1 Red pepper (sliced)
  • 2 Tsp Crushed Garlic
  • A handful of chopped spinach (not baby spinach)
  • A handful of butternut (small cubes)
  • 1 cup of raw cashew nuts (unsalted)
  • 3 cups of water
  • Salt & pepper
  • Chives (garnish)
  • 2 Tbs Extra Virgin Olive Oil

  • A handful of butternut (small cubes)
  • 1 cup of raw cashew nuts (unsalted)
  • 3 cups of water
  • Salt & pepper
  • Chives (garnish)
  • 2 Tbs Extra Virgin Olive Oil

PREPARATION:

Put 1 cup of raw unsalted cashew nuts into a bowl, add 3 cups of cold water to the bowl and allow to soak in the water for 2-3 hours.

After the nuts have soaked for 2-3 hours, put them into a blender for 5 minutes on high speed or until smooth and creamy texture.

INSTRUCTIONS:

1) Add 1 Tbs of extra virgin olive oil into a frying pan on med-high heat…once the oil is hot, add your red onion and fry for 7 minutes.

2) Add crushed garlic. Mix and cook for 2 minutes.

3) Add your chopped spinach and cook for 7 minutes, stirring regularly. I did this step with the lid closed.

4) Add the butternut cubes, mix in nicely, then close the lid and allow to cook for 5 minutes- stirring once.

5) Add the cauliflower and broccoli. Mix in nicely, close the lid again and allow to cook for 3 more minutes.

6) Fill up your kettle and boil water. 

7) While the kettle is boiling you can now add your cashew cream to the pot, add some salt & pepper, stir nicely and allow to simmer for 10 minutes, with the lid off – stirring regularly.

8) Once your kettle has finished boiling, add the boiling water to another pot, put 1 Tbs of extra virgin olive oil, a pinch of salt and bring to the boil. Once the water is boiling you can add your pasta.

9) Look at how long the recommended time for cooking the pasta is on the packet. You should cook it for 3 minutes less than the required time.

The pasta that I used said I should cook it for 9 minutes…therefore I only cooked it for 6 minutes.

10) Strain your al dente pasta and add it to your “main pot”. Mix well and allow to simmer for 5 minutes, stirring every minute.

11) Lick your lips… because it’s time to eat! YIPEE! Serve the pasta, sprinkle chopped chives, some salt & pepper (optional) and voila!!!
